Die Variante der Soße ist ohne Sahne zubereitet, und als Dessert wird eine Option mit frischem Obst serviert. Eine Bewohnerin mit Glutenunverträglichkeit erhält eine ohne Nudeln. Vor dem Servieren spricht Frau Keller kurz mit dem Pflegepersonal, damit alle wissen, welche Bewohner welche Mahlzeit bekommen. The low-fat version of the sauce is made without cream, and for dessert a sugar-free option with fresh fruit is served. A resident with gluten intolerance receives a special diet without pasta. Before serving, Ms. Keller briefly consults the nursing staff so everyone knows which residents receive which meal. This helps blood sugar and fluid intake to be better monitored and adjusted to the residents' chronic conditions.
