En partant des contraintes (végétarien + sans gluten), je pencherais plutôt pour la carte avec le plat du jour : c'est plus simple à adapter et on évite un menu dégustation trop long si les échanges se prolongent. On peut cependant demander au restaurant une entrée et un dessert un peu plus travaillés pour garder un côté professionnel.
Sans réservation, on perdra du temps. Veux-tu que je réserve une table pour 19h30 et que je précise les régimes alimentaires ? Au passage, quel est le budget maximum par personne (avec ou sans vin) ?

Given the constraints (vegetarian + gluten-free), I would lean more toward the à la carte menu with the dish of the day: it’s easier to adapt and we avoid a tasting menu that’s too long if the discussions go on. We can, however, ask the restaurant for a slightly more elaborate starter and dessert to keep a professional feel.
Without a reservation, we’ll waste time. Would you like me to book a table for 7:30 pm and mention the dietary requirements? By the way, what is the maximum budget per person (with or without wine)?
