Normas y técnicas básicas - Taller de cocina

Para aprovechar el taller, el centro recomienda llegar diez minutos antes y llevar delantal. En cada puesto habrá un , una y una ; se pide mantener el espacio limpio y usar distintos para alimentos crudos y cocinados. Durante la práctica se trabajarán técnicas de calor como saltear y , además de tareas de preparación: rallar queso, un limón y .

El profesorado insiste en la seguridad: si se utiliza la , conviene leer la etiqueta y no forzar la tapa. Para un resultado uniforme, se aconseja antes de calentar la salsa y, si se prepara una pechuga, con cuidado para que no se desprenda el empanado. En la próxima sesión el grupo manzana y pollo; al final se compartirá la lista de utensilios recomendados.
To make the most of the workshop, the center recommends arriving ten minutes early and bringing an apron. At each station there will be a bowl, a salad bowl, and a casserole pot; participants are asked to keep the space clean and use different containers for raw and cooked foods. During the session, heat techniques such as sautéing and simmering will be practiced, as well as prep tasks: grating cheese, squeezing a lemon, and dicing.

The teaching staff insist on safety: if a pressure cooker is used, it is advisable to read the label and not force the lid. For an even result, it is recommended to brown the onion before heating the sauce and, if preparing a chicken breast, to bread it carefully so the coating does not come off. In the next session the group will chop apple and bread chicken; at the end the list of recommended utensils will be shared.

Chef Marta: Show Antes de seguir, ojo con la cebolla: primero hay que dorarla en la cazuela, no solo pocharla, para que después la salsa tenga más cuerpo y sabor.

(Before we continue, watch out with the onion: first you have to brown it in the casserole, not just sweat it, so that afterward the sauce has more body and flavor.)

Alumno/a: Show Vale, entonces la corto en dados y la doro; ¿la salsa la caliento en la olla a presión o mejor en un recipiente aparte?

(Okay, then I cut it into cubes and brown it; do I heat the sauce in the pressure cooker or is it better in a separate container?)

Chef Marta: Show En un recipiente aparte, mejor en un bol o en un cuenco y a fuego suave; la olla a presión la usamos para la carne, y después la dejamos cocer a fuego lento para que quede tierna.

(In a separate container, better in a bowl or a small bowl and over low heat; we use the pressure cooker for the meat, and then we let it simmer so it turns out tender.)

Chef Marta: Show Primero haces el adobo: exprimes el limón en un tazón, mezclas los ingredientes y luego rebozas la pechuga justo antes de pasarla a la sartén.

(First you make the marinade: you squeeze the lemon into a small bowl, mix the ingredients, and then you bread the breast right before putting it in the frying pan.)
