I would choose menu B, but proposing several changes to the supplier. They say it is “lighter,” but it’s worth checking the labels: if the salads come with sauces, ask for the dressing on the side and offer olive oil and vinegar. I would also request that the protein options include grilled chicken and baked fish, without breading, and that the bread be whole-grain.
To reduce added sugars and sodium, I would ask for unsweetened yogurts and fresh fruit in individual portions. As a carbohydrate alternative, suggest a portion of brown rice or a legume salad. To control portions without generating complaints, you can serve each dish in standard portions (e.g.: 120–150 g of protein, plenty of vegetables) and leave a table with fruit and water so people can have more if they want. I would also suggest replacing pastries with nuts and portions of fruit.
If you want, I can prepare a short list of criteria for reading labels (sugars per 100 g, saturated fats, sodium) and an email template to send to the supplier.
